NOSE On the nose it develops notes of exotic fruit, a nice length and a smoky green pea charm. PALATE Quiet complex palate of steamed white asparagus, the root-green-rasp of wasabi, sweet featherings of fennel and the delicate bitter-bright-green of matcha. The finish is citrus, earth and celeriac, attractively bitter at the back of the throat.
PAIRING The perfect matches are bowl, asparagus risotto and grilled shellfish.
