L'Etivaz AOP is a hard cheese made from raw milk, which is made by hand from raw milk over an open fire according to a traditional recipe in just over a hundred alpine dairies in the Vaud Alps from May to October. The raw milk is processed directly on site and is full of the aromas of fine alpine herbs.
