The excellent melting ability of our classic raclette cheese, which is mixed with fresh porcini is always convincing. Its typical spicy taste combined with its creamy and full-bodied consistency results in an absolutely harmonious overall package and should therefore not be missing from any raclette meal.
Our raclette cheese wheels are matured for at least 3 months in Giswilerstock and are regularly rubbed with lubricating water to protect them from drying out. The ripening period has a significant influence on the taste and aroma of the cheese: the longer the cheese is stored and cared for, the spicier it becomes. The beautiful natural rind, which can be consumed without any problems, is obtained by storing our cheeses in the cellar on wooden boards.
